    I really enjoy cooking, but sometimes the thought of being in the kitchen for hours is a little too much to handle. Enter this fantastic cookbook that contains delicious, healthy and super fast meals. To be able to cook a good meal in the time it takes to defrost and cook a frozen entree in the oven is a real treat.

    All the dishes that I've prepared from this cookbook have been extraordinary. You can tell that they are all well thought out in that they are very tasteful and the tastes all compliment eachother instead of competing. (Thank you Rachael for your Creamy Polenta and Bolognese Sauce!)

    Probably my favorite thing about this cookbook (besides the super fast meal prep) is the inclusion of carbs. I know that everyone is saying no to carbs, but I just can't say no altogether and finally someone (Rachael Ray) agrees with me: carbs in moderation is OK.

    This is an all around great cookbook and I'm glad to have it in my kitchen.

    Another great cookbook from Rachel Ray. No haute cuisine here - just easy, delicious, healthy meals that take a short time to prep. Great for singles not wanting to spend much time in the kitchen or, like me, couples with little time at all. We use her recipes to save time and still enjoy a home cooked meal.

    This cookbook, is in my opinion Rachel Ray's best one yet. It's creative, original and very tasty. Never boring. It suits all my cooking/diet phases from low cal to low carb and everything in between. The best part about her recipes is that they are easy to tweak if you should come across an ingredient that you don't much care for without losing the flavor of the dish. I love the stuffed tomatoes! I bought this book as a birthday gift for my sister and almost couldn't give it to her, I did, and I went back to the store the next day and bought it for myself. Some opinions are just evil and nasty. Some can't tolerate watching Rachel's show and that's okay, the show is probably geared towards viewers who don't have a stick up their... anyway. Great book and even greater gift! My sister loved it too!

    As a busy mom, I used to believe that the words fast and healthy never went together when talking about food. Rachael has changed my mind forever!

    Rachael's latest offering gives the reader exactly what is needed to get a quick and healthy meal on the table that the kids will actually eat. Now if she'd just come over once a week and watch the kiddos while I have a nap, this mom thing would be easy. Thanks Rachael!

    This in my first Rachael Ray book and you really can make dinner that tastes great, is really fresh in just 30 minutes. I have had the book for 2 weeks and have used it 6 times. Some of the recipies leave a few minutes to relax with a glass of wine.

    Any recipe that can be prepared in under 30 minutes is fine by me. At the end of the day when you've been working all day, or your kids are screaming for their dinner, or you just don't WANT to spend half your life in the kitchen -this is a great book for anyone who's busy but still wants to eat good healthy food.

    The recipes are easy to follow, preparation time is minimal, the food is good -what more can you ask for? We also found that that our young children (1 and 3 1/2) enjoy the recipes as much as we do, we don't have to cook anything different or special for them.

    We also find the recipes good and filling, often when eating so-called healthy food you end up hungry shortly after eating. With this book you will be satisfied and happy.

    Rachael Rays books are good starter books for those who are either new to cooking or hate to cook. The ingredients are simple, and usually affordable. They make great gifts for young adults who are just learning the ins and outs of cooking. And I watch the FoodNetwork and love the Barefoot Contessa, and Paula Deans shows because they offer recipes I use a lot. The FoodNetwork site also carries the daily recipes that Rachael Ray and the others make, which is great.

    Cooking has not been my strongest point, but this book gives great recipies that are easy to follow, and they turn out wonderful!

    I like the fact that the meals are healthy, so at least I feel better both during and after eating.

    It's a great book for anyone who isn't that great at cooking (like me) or that wants to get some great recipies that actually turn out delicious!

    This is another excellent book by Rachael. I'm impressed because everything I've tried so far tastes great and as a by product - they are reasonably healthy. They were fairly easy and quick to make and I had good reviews from all who tried the dishes. The book is well put together with great pictures and fun quipps. I recommend this book highly because it's fun and it's great to try new dishes that everyone loves.

    Good, simple cooking. I recommend for anyone who would just like to prepare some good meals without the fancy all-day in the kitchen event. I also recommend Simple and Simply Delicous by Sylvie Rocher as another excellent cookbook for exotic, simple, delicous meals. I recently got both books and think they're great.
