30 Minute Get Real Meals is one of many Rachael Ray publications brought to you by the immensely likeable lady from the cable channel known as the Food Network. This cookbook is like many of Ray's books in the sense that it stresses meal making that doesn't consume much time.
With this book, Ms. Rachael turns a new page in several different ways. For starters, she has changed publishers from very small Lake Isle Press to very large Clarkson Potter. One small difference to the good is the fact that the recipe font has changed from Ariel to Times Roman. The fact that it has a much richer appearance is irrelevant. Oddly, the color of the type for the recipes is still in a hard to read light blue with ingredients highlighted in a dark red. The font change makes the light color a bit easier to read, but if you had problems with the color of the type in Rachael's last book, then browse this one before buying.
The biggest difference in the substance of this book is that the recipes are no longer put together to form two or three course meals the way they are on the TV show. Almost all recipes stand alone in chapters organized by type of dish rather than occasion or theme. That this is a bigger change than the emphasis on low carb cooking shows that the emphasis on low carb cooking does not change the nature of her dishes all that much. Rachael still focuses on building dishes with strong flavors such as the Italian classics balsamic and red wine vinegar, garlic, Parmesano Reggiano cheese, Prosciutto ham, Italian sausage, anchovies, sun dried tomatoes, capers, and olives.
Overall, this is a good cookbook that could have been better with a few enhancements and a little more talk, nutritional contents, and some more photos would make this cookbook a notch above its competitors and make it more rounded and complete. If you like Rachael, you will like this book, although if you like Rachael's show and don't have any of her other books. Green and White Lightning Chunky Chicken Chili
4 servings 2 tablespoons vegetable or canola oil (2 turns of the pan) 6 6-ounce boneless, skinless chicken breasts, cut into bite-size pieces Salt and freshly ground black pepper 1 medium yellow onion, thinly sliced 5 garlic cloves, finely chopped 1 jalapeño pepper, seeded and finely chopped 2 tablespoons ground cumin (2 palmfuls) 1 tablespoon ground coriander (a palmful) 1 cup mild or hot tomatillo salsa (green salsa on Mexican Foods aisle) 4 cups chicken stock or broth 1 can (15-ounces) cannellini or Great Northern beans 1 handful fresh cilantro, roughly chopped 1 handful fresh flat-leaf parsley, roughly chopped Juice of 1 lime Shredded Monterey Jack or Pepper Jack cheese, for garnish 1 individual lunch-box-size bag of corn chips, optional and not that dangerous
Heat a medium soup pot over medium-high heat with the vegetable oil. Add the chicken to the hot oil and season liberally with salt and pepper. Cook for 2 to 3 minutes, stirring frequently. Add the onion, garlic, jalapeño, cumin, and coriander and cook for 3 to 4 minutes, continuing to stir. Add the tomatillo salsa and the chicken stock. Bring the chili up to a simmer. Add half of the beans. With a fork thoroughly mash the other half of the beans, then add to the chili. This method will help to thicken the chili. Simmer the chili for 10 minutes. Remove the chili from the heat and add the cilantro, parsley, and lime juice.
Serve each bowl of chili with a little shredded Monterey Jack cheese on top. Oh, and go ahead, have a chip or two! I crush up a small bag and stir them right in!
Confession: To be Honest, I eat chili as an excuse to eat corn chips. I rarely need a spoon as all: one chip, two chips, three chips... well, it can get ugly is all I’m saying. To help keep my corn chip obsession in check and still feel satisfied, I buy one individual lunch-box-size bag of chips. This way I don’t have that big gorgeous bag of chips dangerously calling my name from the cupboard. If I don’t have then, I don’t eat them. I exert my self-control at the supermarket. ... |

I really enjoy cooking, but sometimes the thought of being in the kitchen for hours is a little too much to handle. Enter this fantastic cookbook that contains delicious, healthy and super fast meals. To be able to cook a good meal in the time it takes to defrost and cook a frozen entree in the oven is a real treat.
All the dishes that I've prepared from this cookbook have been extraordinary. You can tell that they are all well thought out in that they are very tasteful and the tastes all compliment eachother instead of competing. (Thank you Rachael for your Creamy Polenta and Bolognese Sauce!)
Probably my favorite thing about this cookbook (besides the super fast meal prep) is the inclusion of carbs. I know that everyone is saying no to carbs, but I just can't say no altogether and finally someone (Rachael Ray) agrees with me: carbs in moderation is OK.
This is an all around great cookbook and I'm glad to have it in my kitchen. |

Another great cookbook from Rachel Ray. No haute cuisine here - just easy, delicious, healthy meals that take a short time to prep. Great for singles not wanting to spend much time in the kitchen or, like me, couples with little time at all. We use her recipes to save time and still enjoy a home cooked meal.

This cookbook, is in my opinion Rachel Ray's best one yet. It's creative, original and very tasty. Never boring. It suits all my cooking/diet phases from low cal to low carb and everything in between. The best part about her recipes is that they are easy to tweak if you should come across an ingredient that you don't much care for without losing the flavor of the dish. I love the stuffed tomatoes! I bought this book as a birthday gift for my sister and almost couldn't give it to her, I did, and I went back to the store the next day and bought it for myself. Some opinions are just evil and nasty. Some can't tolerate watching Rachel's show and that's okay, the show is probably geared towards viewers who don't have a stick up their... anyway. Great book and even greater gift! My sister loved it too!

As a busy mom, I used to believe that the words fast and healthy never went together when talking about food. Rachael has changed my mind forever!
Rachael's latest offering gives the reader exactly what is needed to get a quick and healthy meal on the table that the kids will actually eat. Now if she'd just come over once a week and watch the kiddos while I have a nap, this mom thing would be easy. Thanks Rachael!
